Missouri ranks second in the U.S cow and calf inventory, according to the Missouri Department of Agriculture. But less than 5 percent of the state’s beef cattle are are processed in Missouri.
In an attempt to address that disparity and improve the state’s cattle industry, Gov. Jay Nixon held the inaugural Missouri Beef Summit on Monday at the University of Missouri.
Panelists discussed how to keep the beef industry’s value in the state and explored trends that could shape the future of the industry.
